Arkansas Black Straight Applejack Brandy

Commercial Description:
Applejack was the first distilled spirit in the colonies. Before we had Rye, Rum or Moonshine, we had Applejack. George Washington served it to the revolutionary troops and yet, post-prohibition there remain very few producers of this uniquely American spirit.
This recipe pays homage to my Great-Grandfather Arthur “Skipper” Ford. He had an apple orchard where he grew heirloom apples. Our favorite apple, with its tart flavor, was the Arkansas Black variety.
Our applejack is always 100% apples. They were carefully crushed and fermented before entering a small Holstein still. There they were distilled before clarifying the cider, preserving the fresh apple flavor. The distillate rested for 2 years in used French Limousin Oak before spending an additional year in new American Bourbon Barrels to lend a sweetness to the nose and finish.
